I love this keto cheeseburger casserole! Many of you know that if a dish has too many ingredients, I won’t go near it. Since going on the Keto diet, I’ve had to make some adjustments and make a few dishes that are more complicated to get rich flavors and textures. Not this time though – I think we’ve found a winner in this Simple Keto Cheeseburger Casserole that is something I can whip up quickly any night with ingredients we always have on hand.
It looks a little something like this… it’s one of the best keto casserole recipes ever!

Can you eat ground beef on keto?
The quick answer is yes! Ground beef is a great food for getting your protein and fat. In fact, I don’t buy the most lean beef – I buy beef with a higher fat percentage to ensure I get enough fat for the day. Fat helps you stay full and it’s not taboo on a low carb diet, which is why it’s easier to stick with in my opinion.

How To Make An Easy Keto Cheeseburger Casserole
Browning the beef is the first step. And also starts your kitchen smelling amazing! You could use turkey or sausage for a different twist. But good old ground beef will do just fine.

Are onions OK on keto?
When you look at the carb count for onions, they do not appear very keto friendly. But since most dishes use small amounts of onion in the recipe, you just need to be mindful of how many carbs will be in each serving. If you are looking for one vegetable for your keto meal, you may want to find a more keto-friendly vegetable like zucchini or cauliflower.

The finished product will not last long in the bowl! This recipe is great to make for meal prep. Bake a casserole and it lasts the week for lunches or a quick family dinner.

All that texture in there is cauliflower! I’ve been craving potatoes and this is the closest this Keto girl can come to that texture and flavor. It did not disappoint. It’s also nice and saucy, so it’s very filling. I used mozzarella in my keto cheeseburger casserole, but you could totally class it up with your favorite cheeses. It would be great with a gouda or even a brie. If you try something different, let me know!

Next time I might sautee some mushrooms with the onion. Maybe even some green peppers. I think you could really do anything with this. It’s so flavorful but not heavy.

Simple Keto Cheeseburger Casserole
Ingredients
- 1 lb ground beef
- 2 tbs Kerrigold salted butter
- 1/2 c almond flour (we use this one)
- 1 tbs dijon mustard
- 7 oz package mozzarella cheese
- 2 c heavy whipping cream
- 4 c cauliflower rice (or nibblets), cooked
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 chopped onion
Instructions
Preheat oven to 350 degrees. Sauté the onion over medium heat until soft. Brown the ground beef and remove from pan – retain the grease and add 1 tbs butter until melted. Add back in the onion and the salt and garlic powder and stir. Add almond flower and heavy whipping cream. Stir over low heat until the sauce begins to thicken.
In a 13×9 baking dish, melt the remaining 1 tbs butter on the bottom (more if you want cuz butter!). Add the cooked cauliflower and spread evenly. Pour half the sauce over the cauliflower and top with 1/2 the bag of cheese (I use a fork to spread it around a bit). Add the ground beef and remaining sauce on top (again fork, spread). Sprinkle with the remaining cheese.
Bake for 25 minutes with foil over top. Remove the foil and bake another 10 minutes. Let set for 10 minutes before serving.
