Our keto / low carb chicken cordon bleu has all the flavors of the traditional version without the bread carbs. And as a casserole, it’s a easy to throw together for a weeknight healthy dish.
How do you make chicken cordon bleu casserole
Two of the key components – ham and chicken – can be prepped ahead of time to make it easier. The cooked chicken can be chopped or shredded. The rest of the ingredients, you probably already have on hand since they are keto staples.
One bowl, one casserole – I really like making dishes that don’t require a lot of fuss. If I have to go through too much to put the meal on my family table, I’m more likely to give up and order delivery. The name – low carb chicken cordon bleu casserole may sound fancy, but the name is the only fancy thing about this dish.
Yummy creamy goodness. And what’s the hardest part about this low carb chicken cordon bleu? Remembering to spell it BLEU and not BLUE!
Now you start the layering. To build the casserole, start with the chicken / ham mixture and top with swiss cheese. Yes, I had to get creative to make one package of swiss cheese cover the whole casserole, but fortunately geometry was one of my favorite classes :)
Now for the secret ingredient. Because chicken cordon bleu usually has breadcrumbs on top, I mixed shredded parmesan and finely chopped pork rinds together and sprinkled it on the casserole.
I’m not sure if adding it made enough of a difference in flavor – so if you don’t have these ingredients around, I’d leave them out. But it does look cool :)

- 2 cups chopped chicken
- 8 oz chopped ham
- 1 cup cream
- 1 cup sour cream
- 4 Tbs dijon mustard
- 8 oz sliced swiss cheese
- 1/2 cup shredded parmesan
- 1/2 finely chopped pork rinds
- 2 Tbs melted butter
- Mix together cream, sour cream and mustard in a small bowl
- Chop ham and chicken. Add to a medium size bowl
- Pour cream mixture over ham and chicken and mix well.
- Spread mixture into a 13x9 inch casserole dish.
- Cover with sliced swiss cheese
- Mix pork rinds, parmesan and melted butter until it's similar to crumbles
- Spread crumbles on top of the casserole
- Bake at 350 degrees for 30-40 minutes (check to make sure top doesn't overcook)
