I’m not going to write paragraphs of fancy words before I get to the recipe. You know, like those regular food bloggers. Not going to go on and on about how this recipe will change your Keto life… before I give you the ingredients. Not going to tell my story about what an easy dish it was to make…before giving you the instructions. And I’m definitely not going to tell you how delish it is…before just spitting out the recipe.

Keto Spaghetti Casserole – with Zoodles!
- 1 lb ground beef
- 1/2 jar of lowest net carb spaghetti sauce you can find (ours was 8 net carbs per 1/2 cup)
- 2 cups of zoodles uncooked
- 2 cups shredded mozzarella cheese
- sour cream (optional)
Brown the ground beef and add the spaghetti sauce in the skillet, mixing well. Transfer the ingredients into a 13×9 baking dish. Spread the zoodles over the beef mixture and top with the shredded cheese.
Bake at 350 degrees for 30 – 40 minutes. Serve with a dollop of sour cream on top per serving.
Now that we’ve got that out of the way, I will tell you this is MUCH better reheated the next day. It thickens more like a casserole and is just more satisfying, especially for those of us that REALLY MISS NOODLES.
The nutritional info is going to vary based on the sauce you choose and the serving sizes. We cut ours into 6 servings – it was plenty and very filling.
