Of all the things I miss being on the Keto diet, pie is one of the dishes I miss the most. And popcorn. And pretzels. And I’m back to thinking about pie again. It’s not that I ate a lot of pie, but I find myself daydreaming about it.

I tried to make this keto bacon cheeseburger pie a savory pie that Mary and Paul would love. The impossible pie is one of my favorite food memories from my childhood. I thought I could sub Carbquik for Bisquick and make it an impossible pie.
Is Carbquik the Same as Bisquick?
So it was delish. But not the “impossible” I was looking for. And not so much a pie. So call it a bacon cheeseburger casserole in a pie dish. And I’m OK that. Carbquik adds some extra fiber and filler, so if you are on a keto diet, it will help you stay full.
If that’s what I was going for, I nailed it.
So was adding the Carbquik a good or bad idea? I’ll still add it next time. It thickened the batter and made it less eggy tasting than I imagine it would have been without it. There wasn’t a crust like I had hoped. But it added that good fiber that I’ve needed. Anyone else on Keto find they need a ton of extra fiber in their diet? That’s been the biggest benefit of the Carbquik – it’s all dietary fiber.
Look for No-Sugar Bacon
When it comes to bacon and Keto, you have to be aware of sugar in your brand of bacon. I never knew! Never even thought of it. We always use the Appleton Farms bacon that contains no sugar.
Keto is all about reading the labels. Once you’ve set your mind to remove all sugar, it’s a good idea to do your research on hidden sugars in products.
The finished pie looks just as good as it tastes. But don’t expect a crust. I was hoping for the easy way out, but next time, I’ll make one of my Keto pie crusts and make it that way.

Keto Bacon Cheeseburger Pie with Carbquik
Ingredients
- 1 lb ground beef
- 3 large eggs
- 1 tsp salt
- 1/2 cup Carbquik mix,
- 8 strips of cooked bacon
- 1 1/2 cup shredded cheddar cheese
- 1 cup milk
- I medium onion chopped (optional)
Instructions
- Preheat oven to 350 degrees
- Spray a pie plate with no-stick spray
- Brown the ground beef over medium heat
- In a medium bowl, beat eggs and add the ground beef and mix
- Add Carbquik, salt, 3/4 C cheddar cheese, crumbled bacon, milk and onion and mix well
- Pour into pie plate and sprinkle the remaining cheese on top (add more if you like!)
- Bake for 20 - 25 minutes

WiI it make a difference if I omit the salt? I followed the recipe and it tasted super salty to me. I had to put sour cream on it but otherwise I enjoyed it. Is there somewhere I can get the nutrition info?
