We have been seriously bare in the cabinets lately and the other night had to throw something together in a hurry for dinner. I decided to wing it with a crustless quiche and of course took some photos so you could enjoy it too. And really is this a crustless quiche or an egg casserole? You decide.
6 eggs
1/2 c half and half
1 cup mozzarella cheese grated
12 strips of bacon
1 onion diced (sautee slightly)
1 can diced tomatoes drained well
salt and pepper to taste
Mix the eggs, half and half in a medium bowl. Add the salt and pepper and cheese.
Crumble the bacon and add the sauteed onion and stir.
After you have drained the tomatoes, fold them into the batter gently. We don’t want a pink casserole.
Spray pam on a medium size casserole dish and pour the quiche mixture in. Bake at 350 degrees for about 45 minutes or until brown on top and the middle is cooked. Serve with fruit, rolls or salad…
This was super good and super easy and maybe a little healthy too – does bacon count really? I would add a little cinnamon and nutmeg next time…spice it up a bit!
