Cheddar Ranch Cheese Crisps – Keto / Low Carb

So you’re on a keto / low carb diet – you miss your Ranch Doritos? Same. we need our snacks and I’m here to help. These ranch cheddar cheese crisps are not exactly the same as Doritos, but you DO get that ranch flavor. These keto cheese crisps are made the way my other cheese crisps are made – with cheese and seasoning. That’s it. So simple.

It Starts with Ranch Seasoning

I’ve used a Hidden Valley Ranch powdered seasoning for this recipe, but you can make your own. If you do make your own, you don’t really need the buttermilk. It adds some flavor, but I think is optional.

Pick Your Cheese

You start with your favorite cheese. I picked cheddar. Or did cheddar pick me? If you choose a saltier cheese (like cheddar), I really recommend making your own ranch seasoning so you don’t have all that salt. Or reduce the amount of seasoning to taste. If not it’s totally saltyville.

My Favorite Baking Pans

Why do I love my silicone muffin pan? Easy everything. Food easily pops out and cleaning is easy. The silicone cools down quickly (it gets hot, don’t get me wrong). I place it on a baking sheet to cook. I love that found these Nordic Ware baking sheets that don’t buckle in the oven. If you hate hearing that BOOM 5 minutes after putting your pan in the oven, give these a whirl.

Baking time – this is tough and depends on the pan, oven and thickness of the cheddar mixture. Anywhere from 6-10 minutes – I find it takes longer in my silicone pan than it does a metal pan. But the result is the same.

I like to say if you can see through it you’ve hit the right thickness. You’ll think you’re not putting enough in, but trust me – follow the example in these pics and you’ll be fine.

I store them in the fridge, but they can get chewy if you wait to long to eat. I’m sure you could store them in an air tight container, similar to a cookie tin.

Ranch Cheddar Crisps - Low Carb

Cook Time: 8 minutes
Total Time: 13 minutes

Ingredients

  • 1/2 Tbs Ranch Dressing Seasoning
  • 2 cups shredded cheddar cheese

Instructions

  1. Mix the pre-shredded cheese and seasoning.
  2. Drop a small amount of the cheese mixture into muffin pan. We like our silicone one placed on a sheet pan.
  3. Bake 400 degrees F for 6 minutes or so until brown / crispy. Be careful not to burn.
  4. Store in fridge or airtight container.
