This is an excellent question because most fruits are on the “no-no” list for a keto diet due to their high carb content. Berries, on the other hand, tend to be the exception. - 30-40 fresh blueberries
- 4 oz cream cheese
- 4 Tbs butter (I use Kerrygold)
- 1/2 tsp vanilla
- 1/2 cup powdered Swerve (or other sugar free sweetener)
- We are making a small batch for this recipe. Mash about 20-25 blueberries - we used a potato masher, but you could use a small food processor too. Make sure the skins are as chopped up as possible.
- In a bowl, mix softened cream cheese, butter, vanilla and the blueberries until smooth.
- We used a candy mold and added a blueberry to each mold. Spread the mixture into the molds until full.
- We filled them full and then took a flat knife and smoothed the excess on top.
- Freeze them for at least
an hour - they pop out of the silicone easily! Store them in the freezer.
