With the delicious blend of beef, cheddar cheese, onion, mustard, mayo and dill pickles as well as bacon, did someone say bacon?! You’ll totally enjoy serving this for dinner on a ketogenic diet. The fun thing about my bacon cheeseburger casserole is that my family doesn’t even know it’s low carb and keto-friendly, so it’s a total win/win scenario.

You can enjoy many delicious meal ideas on keto and stay low carb too. The basic rule of thumb with your keto diet is to eat no more than 20 grams of carbs per day. If your goal is to go low carb, you can have more carbs, but may not hit ketosis. You can still lose weight though. While you may have to track your carb intake at first, over a short period of time you’ll begin to find your favorite keto dinner ideas and meal options that work for your low carb keto diet.

- 2 lbs ground beef
- 2 eggs
- 2 cups shredded cheddar cheese
- 1 cup chopped cooked bacon
- 1/2 cup sliced dill pickles
- 1/2 cup chopped onion
- 1/2 cup mayonnaise
- 1/3 cup yellow mustard
- Mix the ground beef and eggs in a medium bowl. Spread the mixture in the bottom of a 9x13 baking
casserole - pat it down firmly and into the corners
- Mix the mayonnaise and mustard in a small bowl. Spread the mixture evenly over the beef.
- Sprinkle the cheese and bacon over the casserole.
- Top with sliced pickles and chopped onions.
- Bake at 375 degrees for 1 hour. Suction any excess oil out before serving.
