3 Ingredient Chocolate Pumpkin Muffins

It’s fall y’all!
I’m so excited because pumpkin is one of my favorite things. I love picking them and decorating with them and most important of all, I love cooking and baking with it.

But we’re here to talk about food. More specifically the easiest, bestest muffin you’ll ever make and it is made with just 3 ingredients, one of which is pumpkin. I made these with chocolate, because chocolate is the perfect pumpkin pairing.

Looking through Pinterest (as one does) it’s amazing how much you can make with a can of pumpkin puree – that adds a bit of fiber to so many foods. Yes, I’m semi-justifying making chocolate muffins because I added “fiber”, but it does make it a healthier option than a chocolate cupcake. And if you are a “don’t make it too sweet” person like me, these chocolate pumpkin muffins are perfection.

Here’s the super simple recipe!

Chocolate Pumpkin Muffins

  • 1 box of chocolate cake mix
  • 1 15 oz can pumpkin puree
  • 1/2 cup water
  • (optional) 1 tsp pumpkin pie spice

Mix and pour into muffin cups and bake for 20-22 minutes at 350 degrees.

I’ve seen on Pinterest that they are 2 Weight Watchers points, although I don’t do WW so I can’t validate that.

If you use Pillsbury Moist Supreme Sugar Free Premium Cake mix it is 2 points.

I’m a WW member. The current program is called Freestyle. There are 77 points in an entire box of Duncan Hines Devil’s Food cake mix. The pumpkin purée is zero. I used a Demarle mini muffin pan/mold and got 26 muffins. Therefore, 2.96 each rounding up to 3 Freestyle points. It all depends on the number of servings.

In the oven now! Every week I try to make a sugar free dessert for Monday Night “Coffee and Conversations” at The Carpenter’s House, our church in Oyster Creek, TX. Of course I licked the bowl and I used Sugar Free Chocolate Cake Mix so only 5gm of sugar. Sprinkled top with ground cinnamon!
