Yes you read it right. Plum Amazin Pancakes. I remembered this morning when I woke up starving that Sunsweet had sent me some of their Plum Amazins diced dried plums. I think that’s a nice way of saying prunes. Being a huge “dried plum” fan since childhood, I wanted to see how they worked with pancakes.
They worked and they rocked. I added them to the batter and also sprinkled some on top with maple syrup. I think next time I’ll try half dried plums, half chocolate chips. Can you tell I’m still hungry?
They’d be great in chicken salad. In fact maybe that’s lunch.
