If you know one thing about me, it’s that I cook on the quick. I’m not one to spend hours in the kitchen. Never have been and probably never will.
I mean seriously Pinterest is waiting.
I have an arsenal of quick fix meals, and many involve chicken. I love chicken but I don’t like PLAIN chicken. Gotta have some flavah! One of the best recipes that I have found is Hellmann’s Parmesan Crusted Chicken. Easy peasy to make and so delish, juicy and full of flavor. I wanted to make it for this post that I’m writing as part of the “Chicken Change-Up” with Hellmann’s and One2One Network…
… but I was out of bread crumbs.
And since making breadcrumbs FROM SCRATCH would require me to be in the kitchen for OH I DON’T KNOW MAYBE AN EXTRA HALF HOUR I tried to find something else that would work…
Remember, I might get repinned and I need to be there.
I found the half bag of tortilla chips which were mostly crushed from the other night when I HAD TO HAVE SALSA and started crushing them even more.
I realized that I needed to grab the camera b/c I might need to pin that bag IN HDR.
NOPE, my hand looks a little scary. HDR is not a good look for me.
So I mixed the crushed tortilla chips with Hellmann’s Mayonnaise and a little parmesan (enough to cover my 2 chicken breasts), spread it on the chicken and baked it at 350 degrees for 40 min.
MAYBE 10 minutes prep if you DON’T count the time I checked my Pinterest app on my phone.
And it was delish and juicy and flavorful. And maybe PINNABLE.
