One of the hardest foods to give up on the Keto low carb diet is bread. And for me, the cloud and egg breads don’t cut it. You do what you have to do though and it took me a while to find the replacement that changed everything for me. (Contains affiliate links. It’s basically Bisquick but mostly dietary fiber. It’s the bread you need and makes awesome biscuits, muffins, pancakes and rolls. Added plus, with all that dietary fiber it keeps the engine running if you know what I mean.

These muffins are perfect for any meal. And they are ready in just a few minutes. There’s very little prep and since you only need a few ingredients, muffins are pretty much at the ready whenever you get the craving.

Break it open?

Bread. It’s as bready as it looks.

Let’s get to the recipe:

We get our Carbquik on Amazon. The two pack is the best deal (as of this posting).

  • 2 cups Carbquik
  • 1 cup shredded cheddar
  • 1 cup water
  • 2 tsp Old Bay (with more to sprinkle on top)

Preheat oven to 350 degrees.

Mix thoroughly and spoon into greased muffin tins (we spray with a coconut oil spray) Lightly sprinkle more Old Bay on top. Bake at 350 for 13 – 16 minutes, Makes 8-10. Allow to cool / settle before eating. Store in the fridge or freeze for convenience!
