I was never one to have a lot of crazy sweet cravings. I’ve always been a savory person, and only wanted sweets when stress hit the all-time highs. Or when something looked so good I and any normal human would have to try it.
Keto changed that almost overnight. I guess coming off all the carbs left me with a sweet craving and I had to quickly check the web for ideas. I found several cookie recipes and was also introduced to the most amazing sweetener, Swerve. And that, my friends, changed my Keto world.

Here’s a recipe that has some serious butter flavor:
Shortbread Butter Keto Cookies
2 cups almond flour
1/3 cup erythritol (we like Swerve)
1/8 tsp salt
1 teaspoon of vanilla extract
½ cup Kerrygold butter, softened
1 large egg
Mix the flour, Swerve, salt and vanilla in a bowl. Mix in the butter and egg with your hands – make sure you blend the butter in well (you don’t want butter chunks in the batter). Roll the batter into 1 inch balls and place on lined cookie sheet. Press down with a fork or flat bottom of a cup.
Bake at 350 degrees for 20-25 minutes or until the edges start to brown. Let them cook and settle before eating.
Makes 15-20 cookies.

- 1 g net carb
- 3 g protein
I found this recipe on My Keto Kitchen and it’s delish – a little dry, but it is a shortbread cookie. I will add a drop of Lemon Vitality essential oil next time – maybe try some Ginger and Nutmeg Vitality essential oil too!
