You’ve probably seen it on Pinterest. We started making this simple chicken taco soup a while ago when we heard Beck liked it. Truth be told, he’s a picky eater sometimes, so we look for no-fail recipes that we know he’ll like. He likes chicken and he likes tacos and he likes soup. Should be a given, right?
We make this about once a week or so – and it’s great b/c we have leftovers for a few days. Our standard recipe is a little more than 6 cans. More like 6 cans, 1 box and 2 packets…and 1 dollop. But anyway, here it is:
1 can of kidney beans
1 can of baked beans
1 can of diced tomatoes
1 can diced tomatoes with green chiles (Rotel)
1 pack of taco seasoning
1 pack of ranch dressing mix
1 32 oz. box of chicken broth
2 cans of cooked chicken
We add another ingredient that really boosts the flavor. A dollop of greek yogurt (we love the Aldi brand). What is a dollop? It took me a while to get the spelling right with spellcheck (dolop, dolap, dalop?), so I decided to see what the dictionary said about it.
Dollop: a shapeless mass or blob of something, especially soft food.
I guess that’s fair, but ewww.
Anywhooo…. we basically stirred a big spoonful of greek yogurt into the soup. It gave it just the right amount of creamy texture without making it too creamy. Give it a try!
