It’s soup time. Admittedly, I eat soup all year, but this IS the season when soups are comfort food to warm the soul. Now it’s a little past pumpkin season, but we found a great deal on pumpkin gnocchi at Aldi, so it’s pumpkin time until we run out. What’s on the menu? A chicken and pumpkin gnocchi soup that will warm your heart and your tummy. A cream bases soup that is even better as leftovers.
We tried the recipe from the Skinny Fork. Ours was delish and made the perfect weeknight dinner. We couldn’t get Beck to eat it, but maybe without the spinach he would – he’s adverse to anything green mixed in other colored food. I sprinkled a little parm on mine. We’ll be making this again soon!
