I have a new favorite dish to prepare. Crispy veggies. So far I’ve tried edamame baked with parmesan cheese and I could eat that like candy. Tonight I tried crispy broccoli. It’s so tasty and is really a meal in itself.

Here’s how easy it is to have your own veggie treat.

Crispy Broccoli
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Serves: 2-4
  • 3 cups small broccoli spears
  • EVOO
  • Salt to taste
  1. Line a baking sheet with foil and cover lightly with EVOO. Sprinkle lightly with salt (to taste). Stir the broccoli around to coat evenly.
  2. Bake at 425 degrees for 30-40 minutes, turning halfway through.

    Hubs can’t stand soft vegetables which makes it hard to cook any. I’ll have to try this!
