This dessert was created for a contest sponsored by Cabot Cheese. I was given the task to create a dessert made with Cabot Cheddar and loving cheese the way I do I was excited to see what I could create.
Who doesn’t love pie? OH, OK then you sit down and go read another blog.
To the Normal People out there here’s a great recipe for a quick and easy dessert – I only do quick and easy cooking. And PEOPLE IT’S PIE! You know you love me now.
Cranberry Pecan Double Cheese Mini Pies
Makes 4-6 Mini Pies.
1 8 oz. container whipped cream cheese
1 cup grated Cabot Seriously Sharp cheddar cheese
2/3 cup dried cranberries
2/3 cup brown sugar chopped pecans (if you can’t find bscp, you can add regular chopped pecans and 1 T brown sugar)
2 premade pie crust rounds
caramel topping to drizzle
Mix cream cheese, cheddar cheese, cranberries and pecans in a bowl.
Roll out the pie crust and cut two different size circles – one large enough to fill the bottom of the muffin tin and one the right size to cover it. Fill the pie shell with filling up to the brim.
Cover and seal the edges. You can get fancy with this but I like using just a plain old fork to seal the top. Don’t forget to poke a few fork holes in the top.
Bake according to the directions for the pie crust (and you might need to foil cover the edges in the last few minutes). Drizzle with caramel sauce and a few extra pecans and VOILA – you have a loverly dessert in no time.
