In the true tradition of ME NOT REALLY COOKING, I am sharing one of our favorite sweet treats.  What’s nice is that you can make as many or as few as you want at a time.

Sugar Cookie Cups Cheesecake

Start with this ready made cookie dough and spread it in the muffin tins to create a cup shape.  Make it thin, these cookies rise… I used 2 squares per cup, you could probably get away with 1 or 1 1/2…

See how nicely they cook up?  I find they need to cook a little longer than the package says, just watch for burning at the edges.  You need to let them cool…

But they come out yummy.

That’s right, now I take the already prepared cheesecake mixture from Philly…

Why yes, you could eat it with a spoon, but we are going to fill the cups.

Garnish with something fun like raspberries and VIOLA!

I know, stop touching the screen, this isn’t scratch and sniff!
